Most bistros pretend to be everything. We pretend to be three things — and we're stubborn about each one. Beer Snobz, Pizza Snobz, Wine Snobz. One door, one kitchen, three obsessions. Cross-pollinate as much as you like.

00 flour. San Marzano. Fior di latte. Wood oven at 900°F, 90 seconds, leopard-spotted crust, charred basil on top. If you ask for ranch we'll bring it without judgment — but you should try the pie first.

Eighty bottles. Old World heavy, New World honest, two natural orange wines for the curious. The list is short enough to memorize and deep enough to argue. The sommelier knows every story — ask the question you're embarrassed to ask.

Exposed brick, an oak-paneled bar, a wood-fired oven you can watch from any seat in the room. Bulb-soft Edison lighting that doesn't ask you to leave at nine-thirty. A counter where the sommelier will pour you something off-list if you wear the right hesitation.

We built the room we wanted to be in on a Tuesday at 7:42 — and put a verified door on the front of it.

Tuesday through Thursday, the room runs slow on purpose. Friday and Saturday, the kitchen earns its rest. Sunday is for long lunches and longer pairings. Mondays, we close, sharpen knives, and clean the lines.

Do I need a Klout Klube membership to dine here?
No. Snobz Bistro is open to the public with a reservation. Klout Klube members get priority booking on Friday and Saturday nights, complimentary bar seating without a reservation, member pricing on flights and the chef's tasting, and access to private members-only events (beer dinners, sommelier nights, the monthly pairing supper).
What does "Snobz" actually mean?
It means we have standards and we don't apologize for them. The wood oven runs at the temperature it should. The taps clean on the schedule they should. The wine list is curated by a human who can defend every bottle. Pretentious is a compliment here — we earn the word by getting the boring details right, not by performing them at you.
What are the hours?
Tuesday – Thursday: 4 p.m. to 10 p.m.
Friday – Saturday: 4 p.m. to 11:30 p.m.
Sunday brunch & lunch: 11 a.m. to 9 p.m.
Monday: closed — knives sharpened, beer lines cleaned, kitchen reset. The Sunday-night long pairing menu is the locals' secret.
Where are you located?
In Baton Rouge — exact address is shared with confirmed reservations and Klout Klube members. (We're a small room and we'd rather a guest find us through a friend or a booking than walk in cold and find no table.) Members get the address along with their credential.
Is there a corkage fee? BYOB policy?
We allow one bottle per table from outside the cellar at $25 corkage, waived for Klout Klube members on Tuesday and Wednesday. The catch: the sommelier asks to see it. If it's a bottle the list doesn't carry, we'd love to taste it ourselves and we'll tell you what it pairs with that night.
What about dietary restrictions?
Gluten-free pizza dough is available with 24 hours' notice. Vegan and vegetarian options are on the menu, not as an afterthought. Notify the kitchen at the time of reservation for severe allergies and the chef will build a parallel tasting if you want to do the five-course. Nothing is too snobbish for a real allergy.
Can I host a private event here?
Yes — the back room seats 16 for a long-table dinner and the full bistro buys out for parties up to 48. Private events get a custom menu built around your group and a sommelier who walks the room. Reach out via the reservation page with the date and the count.
